Coeliac Disease

The Coeliac is an hereditary disease that determines a hyper sensibility to gliadin, a protein contained in the corn gluten, rye and in oats and in barleycorn. The person suffering from celiac disease become allergic to all the products containing gluten and deriving to these cereals.

Because of the damages deriving from gluten to intestine the symptoms could be diarrhoea and abdominal pain; in the last years several studies noticed that more from symptoms related to digestive system there could be other symptoms called “extra-intestinal”. Today the approach to celiac disease in turned into a multidisciplinary way of facing the disease.

There aren’t tipical symptoms for celiac because they could be misunderstood with Crohn disease, anaemia, nervous diseases. Celiac could be silent in several people and it could manifest itself because of a strong stress activity on the physic, like pregnancy, a strong emotion and so on. Celiac can also include changing in person’s behaviour like irritability and depression.

Therapy: celiac has no treatment but it can be effectively “regulated” using a customized diet. One time gluten is removed by the diet, the inflammations to intestine will start to reduce in few weeks. At the beginning it could be useful to take some vitamins integrating.

A meal that has no effect on celiac is polenta; infect it can be eaten by the celiac people being composed by sweet corn flour and it has no effect on intestine. Polenta becomes a good solution for celiac to appreciate a “regular” meal enriched with sauce and mushrooms.
